What is a lamb cut?
A lamb cut sits between the plain puppy cut and the full poodle patterns: short where a dog gets dirty and wet, full where it shows. This page explains the shape, which coats carry it, how it relates to the show ring, and what it takes to keep those legs looking right through a Cape Ann winter.
The short version
A short body, fuller legs, and a neat face and feet
The body is clipped or scissored short and even, following the outline of the dog. The legs are left longer and scissored into straight or gently flared columns, which gives the cut its soft, lamb-like legs. On a poodle the face, throat and feet are often clean, the head carries a rounded topknot and the tail may end in a pompon; on a bichon or a doodle the face is more often kept short and round instead of shaved.
The AKC poodle standard does not use the name, but its Sporting clip is built on the same contrast. In that clip the face, feet, throat and base of the tail are shaved, there is a scissored cap on the head and a pompon on the tail, and the body and legs follow the outline in a short blanket of coat no longer than an inch, with the leg hair allowed to be slightly longer. A pet lamb cut usually makes the legs a little fuller still.

Who wears it
Poodles, bichons and curly poodle crosses carry it best
Full legs need a coat that grows continuously and stands up when it is brushed out, which is why poodles of all three sizes, bichons and curly poodle crosses wear the style best. Doodles with a looser, wavier coat can wear a softer version, though the legs will not stand as crisply. Owners often choose it for a poodle that needs a practical body but should still look like a poodle, without the shaved bands and puffs of the show ring.
It is not a cut for short-coated or double-coated dogs, and it suits wire-coated terriers poorly, since their coats are stripped or clipped to a breed pattern rather than scissored full. The Bedlington terrier, which the AKC calls a terrier in sheep's clothing, has its own breed trim and is a separate conversation. Upkeep
The legs are where the work goes: brush them to the skin every few days
A lamb cut moves the upkeep to the legs. Full leg hair collects wet sand, salt, burrs and snowmelt, and it rubs at the elbows and between the back legs, which is where knots begin. Brush each leg in layers from the skin outward and follow with a metal comb; if the comb catches, go back with the brush. The short body needs far less attention, a quick brush once or twice a week.
Cape Ann adds its own debris. In the off-season, at the time of writing, Good Harbor takes dogs on even-numbered days until March 31 and Wingaersheek on odd-numbered days until April 30, and full legs come home from either heavy with sand. Rinse them in fresh water and dry them fully the same day, because damp curl tightens into knots as it dries. From April to November, part the leg hair after woodland walks to check for ticks.

How often
Book again before the legs lose their line, which happens before the body looks untidy
Leg shape is the first thing to go. As the coat grows, the columns lose their line, the feet grow over and the hair at the elbows starts to knot, usually well before the short body looks shaggy. Ask the groomer at pick-up when to come back for your dog's coat and the leg length you chose, and book it before you leave; rebooking at pick-up takes $5 off the next visit. A $10 face trim between full grooms keeps a poodle's face clean.

Ask for the leg length and the face you want, and bring a photo
Because lamb cut means slightly different things to different groomers, describe the parts. Say how short the body should be, how much fuller the legs, whether the face and feet are shaved clean or just short, how round the topknot is, and what to do with the ears and tail.
